Soft pressing and fermentation with selected yeasts at a controlled temperature.
SPARKLING AND REFINING PROCESSES
Sparkling process via Martinotti-Charmat method at a controlled temperature of 61-64F, with subsequent aging on the lees in autoclave for a total of 5 months.
ALCOHOL CONTENT
11,5% vol.
TIPS FOR SERVING
Cool the bottle down gradually, avoiding sudden changes in temperature, as well as prolonged storage in the fridge. Serve in a large glass at a temperature of 43-44 °F.
